11:40 Where you hear something like this? Sabaton has done it on occasion. And i believe Nightwish and Epica, too. It is not quite as uncommon as you may think. If you want an example: Sabaton - The Price of a Mile - Live at Wacken Open Air 2019 is the one that I can think of off the top of my head.

This is an older video so you might not see this but serpent eating the horizon is so great because half way through they add the 4 protags main themes into the song as the fight shifts in your favor. Ending in a final mash up as you start to pound the boss at the end.

It's honestly one of the most hype things in the whole series. And the cutscene on it's own sort of flows with the music. I'd say check it out on your own I can't link it, but I'd recommend one called "Sonic Frontiers FINAL BOSS PERFECT SYNC". I'd say start at 6:00 for some context

This version has Kellin as the vocalist. Now that we have this and the orchestral one we're almost at 'His World' level of variety and I love it. This one is so crazy in-game though, ain't gonna lie!

On why you might like the OG tracks more, I think its inportant to remember the context of these songs. Many of the Smash Remixes are purposely made to be more upbeat and "battle" appropriate. The original songs often took their time with pacing because they were trying to capture a vibe or feel. The original opening/bombing run music is literally the first main tracks you hair when you start FFVII, so the intro is longer and more drawn out where the bombing run music packs a punch and is meant to be the looping music for the entire opening section of the game.

I absolutely adore how the first rendition of the main title theme before it wraps back around and starts doing a little beat juggling, has a lot of notes from various rare games, like I specifically noted parts that sounded right out of diddy kong racing and DK64, whereas the third rendition with the squealing guitars sounds RIGHT out of Nuts N' Bolts.
